Cucumber & Dill Salad

Ingredients:

  • 3 cucumbers, seeded and chopped
  • 3 tomatoes, seeded and chopped
  • 1 red onion, chopped
  • ⅓ cup finely chopped fresh dill
  • 3 tablespoons white wine vinegar
  • ¼ cup olive oil
  • 1 lime, juiced
  • 1 teaspoon minced garlic
  • ½ cup crumbled feta cheese
  • salt and pepper

Instructions:

  1. In a good sized bowl, toss all of the ingredients together. Season with salt and pepper. cover and store in the refrigerator for a few hours to let the flavors blend.
  2. Serve on a bed of mixed leaves with a dollop of greek yoghurt.
