Ingredients:

Base

145 g      Salted butter
285g       Digestive biscuits

Filling

180g       Double whipped cream
285g       Cream cheese
145g       Mascarpone
70g         Plain yoghurt
215g       Caster sugar
43g         Water
29g         Bottled lemon Juice
21g         Gelatine

Dressing

270g       Mango coulis
13g         Gelatine
